What must I have in my DNS for an email address to work?
Does the hosting and Cloudflare have to be the same values?

Either you can use the same DNS provided by your host MX records (free), or you can use something like Zoho(free + more private), or any other paid service(paid+private).

You can always look up the DNS on your domain with a tool like this: intoDNS: checks DNS and mail servers health
